Asparagus, Rocket, Avocado & Egg Salad for Healthy Hair

This superfood salad is perfect for lunch or even a light dinner. It not only has some of my favourite ingredients, it also supports hair health with its nourishing nutrients, vitamins, oils and minerals.

This salad provides healthy fats for shiny hair (avocado & olive oil). Protein, zinc, potassium, copper, magnesium, biotin (eggs), vitamin E and vitamin B (sunflower seeds) and chlorophyll (rocket) for a healthy scalp and hair.

Hair is at least 90% protein, eggs provide the much needed protein for hair growth. Their amino acid L-Lysine also allows for absorption of nutrients, meaning that eggs play a role in keeping hair strong.

Ingredients (serves one)

10-15 asparagus stalks 1½ tsp. of olive oil

1 cup Rocket

½ avocado, sliced

1-2 eggs

1 tbsp toasted sunflower seeds

Freshly squeezed lemon juice

Sea salt and pepper to taste


Instructions

  1. Remove ends of asparagus, then cut into 2-3 pieces. Heat olive oil in a pan over medium heat and add asparagus for a few minutes. Season with salt and pepper. Set aside.

  2. Boil an egg for 4-6 minutes (dependent on preference), then place into bowl of iced water to stop the cooking process. Once cooled, peel the egg, set aside.

  3. Toast sunflower seeds in a pan on low heat for approximately 3 minutes or until golden brown.

  4. Dress Rocket with olive oil and lemon, add asparagus, toss.

  5. Halve egg and slice avocado. Place both on top of rocket and asparagus.

  6. Sprinkle with toasted sunflower seeds
